Lunch-on-the-go Ideas
I take advantage of frozen veggies (which I get from Wegmans and the Indian store) and the night before I rinse cauliflower, peas, corn, and lima beans and sometimes lightly cook them. With a sprinkle of salt/pepper or a drizzle of Trader Joes green dragon sauce, you get a tasty and filling lunch.
1. Frozen veggies as said above plus boiled french lentils and side of sliced organic carrots, 365 crunchy peanut butter, Trader Joes PB crackers, and hummus
2. Frozen veggie combo, homemade muffin, Trader Joes fig bite and PB crackers, and chorafali khakra (basically a giant spicy lentil crisp)
3. Frozen veggie combo this time with brown chickpeas (kala chana) instead of lima leans. A side of pretzel chips and a half a PBJ on Dave's Killer 21 Whole Grain Bread
4. Beach day with a book and a container of cashews, pumpkin seeds and goji berries. Honestly the taste and texture got boring kinda quickly. I recommend throwing in raisins or dark chocolate chips or cereal.
5. Another beach trip with my frozen veggie combo, boiled lentils, sliced carrots, and PB. The platter got rattled around by my little cousins so the lentils and carrots and peanut butter mixed but it was no biggie.
6. Before sleepaway camp, I got lots of food ready because I did not want to go starving if there wasn't enough vegan options (there was thankfully) I packed 3 bags of homemade trail mix (Trader Joes crisp rice cereal and o's + dried fruit + nuts) and 2 slices of Dave's Killer Bread and 1/2 a Alvarado St. Bakery onion bagel and my homemade banana cookies that I got from Shilpa Shetty's recipe and dry okra from TJs.
7. My senior year school lunches used to be a new type of pressured bean every week, like the green chickpeas that I found at the Indian store, which I soaked, pressured and drained. I took this with a side of Nature's Path cereal and cucumber- which lost a lot a water. I do not take lunch to school anymore because my lunch is too early and when I come home from school I am always itching to make a meal so I detox for 8 hours between breakfast and lunch and just drink water during the school day. Unless I have a late test, then I take a small snack.
